Recipe Corner: Tomato Pie

 


Since Meryl Keegan was not able to attend the potluck in August, she wanted to contribute the recipe for the dish she would have brought. Meryl says this dish is so fast and easy to prepare, “even I can do it.”

Ingredients:
1 store bought pie crust
1 cup shredded cheddar 
Put some extra cheddar aside to sprinkle on top
1 cup mayonnaise
4 tomatoes
2 T basil
Salt and Pepper to taste

Directions:
Preheat oven to 350°. Poke holes in the bottom of the pie crust and bake for approximately 10 minutes.
Combine mayonnaise, cheddar, basil, salt and pepper in a bowl. Slice tomatoes and place them in the bottom of the pie crust. Cover tomatoes with cheese mix and bake at 350° for 25-35 minutes. Sprinkle additional cheese on top and let sit for about 10 minutes before serving. Enjoy.
