Recipe Corner: Margo's Toffee

Ingredients:
Directions: Combine butter and sugar in a medium sized pot and cook on low, stirring occasionally until the mixture reaches 300 ºF. It is OK if you get a little bit higher than 300 ºF, but your toffee will not turn out if you are below that temperature. Therefore, you should stir the mixture thoroughly when the thermometer first reaches 300 ºF and then let it reach that temperature again. The mixture should be golden brown and form a soft ball in the pot when stirred (it shouldn’t be sticking to the sides) approx. 30 minutes. In the meantime cover a baking sheet with parchment paper, get your chocolate chips ready and make sure you know where to find your spatula. Pour the 300 ºF sugar mixture onto the parchment paper and spread it depending on how thick or thin you prefer your toffee. Sprinkle the chocolate chips on the sheet of toffee and wait about 5 minutes until most of the chocolate chips appear to be melted. Spread the chocolate to the edges of the toffee and sprinkle the nuts over the whole thing before the chocolate cools. Once it has cooled, break the toffee into pieces and enjoy!
